Cowboy Pancakes

They’re called “Cowboy Pancakes,” and they are my favorite; found exclusively at Fiddlestixs Cafe . Cowboy Pancakes is a sweet pancake mixed layered on both sides. Starting on the top, the fluffy pancakes smothered with cheddar cheese and runny eggs. Underneath the pancakes, caramelized onions and mixed peppers with chunks of ham, to give for the perfect combination of sweet and salty treat. You can drizzle syrup, over the layered pancakes for extra sweet, but it’s not needed.
